Sims 3 PS3 version turn off aging...?

OOk i just got a ps3 and soon will b getting sims 3. im a BIG sims fan, and i cant wait for the fed ex guy to hand me over the sims game. i was just wondering about the game, do the sims ever grow up, and if so can u turn it off? i havent got it yet but i reallllyy want to know if u can turn it off and how? And can some people tell me why u like this game, not dislike just like? thanks
